The Tower of Sour is a red tower with up to eight or twelve blocks that stand on top of it. As you tame sour piñatas, segments of this totem pole are awarded to you and added to this tower. You can also purchase totem blocks from Costolot's General Store if you want to postpone taming a particular sour. Once added to your Tower of Sour, each segment can be individually activated or deactivated. When a segment is activated the tower will scare away all sour piñatas of that particular species. It doesn't block regular piñatas from entering the garden.
Your Tower of Sour blocks carry over from garden to garden, so you don't have to re-tame sours in a new garden if you don't want to.
Segments are added in the order that sour species are tamed (or blocks are purchased), in order from bottom to the top, so the arrangement of the Tower of Sour blocks may appear different from somebody else's garden.
Once you have completed the Tower of Sour with all 8 or 12 pieces for each Sour that can be encountered a Galagoogoo will be sighted near your garden.
In Viva Piñata: Pocket Paradise, the Tower of Sour is not actually a tower, but instead eight separate Sour Blockers that serve the same purpose and are also obtained in the same way, but are not placed on top of each other, instead being evenly spread out outside the edges of the garden.
